Rock candy is made from crystallizing sugar. The crystallization process is the same process that is responsible for creating diamonds and quartz. For creating rock candy, the sugar molecules are broken apart and then allowed to reform under specific conditions that create larger, purer crystals. This can be accomplished by dissolving sugar in boiling water and allowing the water to evaporate. By adding a string or stick into the solution, the crystals have something to cling to and in about a week or so, you have a rock of crystals!
