Tropical Banana Cake Sensations

 

There is nothing like a delicious tropical banana cake to bring the charm and warmth of the islands to your own home. No matter what the weather outside, this delicious taste can bring in the warmth of your favorite tropical island.

Ingredient List

  • 2 store bought or homemade angel food cakes, each 10-12 ounces
  • 2 one pound tubs of vanilla icing
  • 1 teaspoon of banana extract
  • Food coloring (yellow of course)
  • 1 mashed banana, well ripened
  • 2 cups of sweetened flaked coconut
  • 1 tube of green icing for decoration
  • 1 cup of fruit shaped candies (Ju-Ju-Be’s or similar)
  • 1 cup of chopped chocolate or chocolate morsels

You will also need some tropical decorations, like plastic palm trees, and tropical plants.

Preparation Steps

Begin by placing one of the angel food cakes, with the widest side down, on a serving platter. Use a large bowl to stir the banana extract into the vanilla icing, making sure that the extract is well mixed. Slowly add the yellow food coloring, one drop at a time, until the desired color has been achieved.

Transfer one half cup of the banana flavored icing into a medium sized bowl and stir in the mashed banana. Spread this mashed banana mixture over the top of the cake, then cut a two inch wide wedge from the second angel food cake.

Spread 1/4 cup of the banana flavored frosting over the cut side of that second cake, and bring the cut ends of the second cake together until they adhere to one another. Place the second cake, with the widest side facing down, on top of the first cake on the serving platter.

Chop the wedge you removed from the other cake into cubes, and fill the hole in the center of each cake with these cubes. Spread the remaining banana flavored icing evenly over the top and sides of both cakes and sprinkle the cake with coconut.

To complete the tropical look of this cake, you will create a volcano mold by using aluminum foil and molding it into the proper shape. The volcano mold should measure between 2 and 3 inches in diameter. Melt the chocolate chips or chopped chocolate using a microwave safe bowl or a double boiler, and then dip the mold into the melted chocolate and let it cool and harden.

Place this volcano mold on the top of the cake and fill the center of the mold with green icing. Place the palm tree and other tropical decorations inside the mold and arrange the fruit shaped candies around the base of the palm tree and the base of the cake.
