Orange Lover’s Dream Candies
If you love orange and chocolate, this recipe is for you. This great treat is perfect for parties, for the office or just for hanging out at home.
Ingredient List
- 1/2 cup of white chocolate
- orange food coloring
- 1 teaspoon of orange oil or orange extract
- 2-1/2 cups of sugar
- 1/2 cup of water
- 1/4 teaspoon of salt
- 2 egg whites
- 1/2 cup of light corn syrup
- 1 teaspoon of vanilla extract
- 1/2 cup of chopped pecans
Preparation
Steps
Begin by using a double boiler placed over simmering water. Use
the double boiler to melt the white chocolate
and stir in the orange food coloring to create an orange colored
chocolate. When the orange tinted white chocolate is smooth and
well melted, remove it from the double boiler and add the orange
oil or orange extract. Pour the melted and cooled chocolate on
to a cookie sheet that has been lined with aluminum foil. Spread
the mixture evenly. When the chocolate mixture has cooled, it
can be chopped into medium or small pieces as desired.
Combine the sugar, the water, the salt and the corn syrup using a three quart saucepan. Cook the mixture over low heat, stirring the mixture gently until the sugar has completely dissolved. Turn the heat up to medium and put the lid on the saucepan for two or three minutes to help wash down any remaining sugar crystals. Then remove the cover from the saucepan and continue to cool the mixture without additional stirring. Continue cooking until the mixture reaches a temperature of 260 degrees Fahrenheit. The temperature can be checked using a standard candy thermometer.
Carefully beat the egg whites until stiff peaks have formed, then pour the hot sugar mixture over the top of the egg whites in a thin stream, while mixing at high speed. Add the vanilla extract and continue to beat the mixture at high speed until the candy begins to lose its glossy appearance and begins to hold its shape. Add the nuts and the pieces of orange colored white chocolate, and drop rounded spoonfuls on to a sheet of waxed paper.
