Indulgent Coconut Creations

Ingredient List
- 5 ounces of condensed milk
- 1 teaspoon of vanilla extract
- 1 cup of confectioner’s sugar
- 14 ounces of sweetened coconut flakes
- 3 cups of semisweet chocolate baking chips
Preparation Steps
Use a large bowl to combine the condensed milk, the confectioner’s sugar, and the vanilla extract. Stir the mixture well until all ingredients have been fully incorporated and the mixture is smooth in appearance.
Add the sweetened flaked coconut and stir well to incorporate it throughout the mixture. Use a tablespoon or melon baller to scoop out pieces of this candy mixture on to a baking sheet and carefully roll the candies into small balls. Refrigerate the candy pieces until they are firm, typically for about an hour.
Get out a double boiler and use the top part to melt the chocolate chips. If a double boiler is not available a metal bowl set over a pot of simmering water can be used. The chocolate chips can also be melted in a microwave safe bowl, but care must be taken to avoid scorching or burning the chocolate. If this method is used be sure to remove the bowl often and stir the mixture well.
After the chocolate chips have been fully melted pour the melted chocolate into a shallow bowl. Remove the chilled coconut mixture from the refrigerator and use toothpicks or two forks to carefully dip those coconut balls into the melted chocolate. Be sure to roll the coconut mixture in the chocolate to coat the pieces completely. Shake off any excess chocolate and place the candy on a rack over a baking sheet coated with a piece of waxed paper. Repeat the process with the rest of the candies and allow them to air dry. The candies can also be refrigerated to harden them.
