If you have a hankering for a delicious but easy to prepare candy recipe, this recipe may be the right one for you. This recipe makes a wonderful homemade candy, perfect for sharing with friends and family, taking to parties and celebrations or just enjoying at home.
Ingredient List
- 2 egg whites from large eggs
- 2 cups of sugar
- 1/2 cup of water
- 1/2 cup of light corn syrup
- 1/2 cup of pecans or walnuts
- 1 teaspoon of vanilla extract
- Preparation Steps
Begin by separating the eggs, discarding the yolks or setting them aside. Beat the egg whites using an electric mixer and continue to beat until the egg whites are stiff.
Line a baking sheet with waxed paper or parchment to prevent sticking. Place the sugar, light corn syrup and water into a medium sized heavy saucepan. Heat over medium-high heat, stirring well to dissolve the sugar. Bring the mixture to a boil and continue to cook until the temperature has reached 260 degrees Fahrenheit. Use a candy thermometer to measure the temperature precisely. The mixture will be at the proper temperature when a piece of the mixture dropped into a glass of cold water holds is shape. The typical heating time for most stoves will range from 10 to 15 minutes.
Remove the mixture from the heat and pour it in a steady stream into the bowl containing the beaten egg whites. Beat the mixture using an electric mixer on high speed. Beat for approximately three minutes on high, scraping down the sides of the bowl as you work.
Add the vanilla to the mixture and continue to beat on high speed just until the mixture has begun to lose its glossy appearance. The required time will typically range from 5 to 6 minutes.
If the mixture begins to flatten out, beat it again for about another minutes. If the mixture becomes too thick, add in a few drops of hot water until the mixture takes on a softer consistency.
Add in the pecans or walnuts, stir the mixture to mix them thoroughly and then quickly drop the mixture tablespoon by tablespoon on to the waiting baking sheet.
Place the candies on a serving dish, pass them out and enjoy. The recipe should make approximately four dozen pieces, more than enough to share with family members, friends and coworkers.
