Chocolate Nut Caramel Chews

At times we crave something sweet, and at other times we crave something salty instead. This handy and easy to prepare recipe helps us to satisfy both of these common cravings in a single bite. If you crave the sweet taste of chocolate and the salty taste of peanuts all in one handy package, this recipe is for you.

Ingredient List

  • Two dozen unwrapped caramel candies
  • 1/2 cup of unsalted dry roasted peanuts
  • 1/4 cup of white chocolate chip morsels
  • 1-1/4 cups of sweetened coconut flakes
  • Nonstick vegetable cooking spray

Preparation Steps

Begin by lining an eight inch by eight inch square microwave safe baking dish with plastic wrap. Be sure that the plastic wrap comes up over all of the sides. Spray the prepared baking dish with the nonstick vegetable cooking spray.

Use the same nonstick cooking spray to spray a medium sized microwave safe bowl. Use the bowl and add the two dozen caramel candy pieces, the dry roasted peanuts, the white chocolate morsels and one half cup of the coconut flakes.

Stir the mixture to combine it well, and set the microwave on high. Place the bowl in the microwave and cook the mixture for one minute. Remove the bowl from the microwave, stir the mixture, return the bowl to the microwave and cook for another 30 seconds on high.

Remove the mixture from the microwave and stir. Scrape the mixture into the prepared square baking pan. Be sure to use a rubber spatula to scrape the mixture and flatten it out so that it lies in the pan evenly.

Cover the top of the candy using the remaining coconut flakes. Use the rubber spatula to lightly press the coconut flakes into the chocolate mixture. If the mixture seems too firm, place it back in the microwave for a few seconds to soften it up.

Let the candy cool completely, then use the plastic wrap to remove it as an entire block. Use a sharp knife to cut the candy into one inch squares. After the candy has been cut into appropriately sized squares, serve them immediately and enjoy.
