Chocolate Cupcake Sandwiches
Whether the occasion is a formal party or just a casual get together, chocolate cupcakes are always a big hit. This recipe provides a new twist on this old favorite.
Ingredient List
- 1/3 cup of cocoa powder
- 3/4 cup of mayonnaise
- 1 cup of warm water
- 1-1/2 teaspoons of vanilla extract
- 1 cup of sugar
- 2 cups of sifted cake flour
- 2 teaspoons of baking soda
- 1/8 teaspoon of salt
Preparation Steps
Begin by preheating the oven to 350 degrees Fahrenheit.
Place cupcake liners in a muffin tin and set aside.
Combine the cocoa powder and water, mixing until the mixture is smooth. Fold in the mayonnaise, making sure that the cocoa mixture is not too hot. Then add the vanilla and whisk the mixture until it is smooth.
Use a mixer to combine the sugar, cake flour, baking soda and salt. Mix slowly until it is well mixed. Next blend in the wet cocoa mixture, mixing on medium high until the mixture is well blended. Scrape down the sides of the mixing bowl as you work and blend for approximately 30 seconds.
Fill the cupcake liners three quarters of the way full with the batter. Bake the cupcakes for 30 minutes or until a toothpick inserted into the center of the cupcakes comes out clean. Remove the cupcakes from the oven and let them cool on a cooling rack.
Slice each cupcake in half horizontally and serve the halves to your guests along with chocolate mousse, whipped cream and an assortment of candy toppings. The kids in particular will love to make these great chocolate cupcake sandwiches by spreading the chocolate mousse on half of the cupcake, adding some whipped cream and sprinkling on a generous amount of candy toppings.

Ingredient List – Chocolate Mousse
- 13 ounces of semisweet or bitter chocolate morsels
- 2 tablespoons of butter
- the yolks from 2 large eggs
- 1-1/2 cups of heavy cream
- 2 tablespoons of sugar
- 1 teaspoon of vanilla extract
Use a microwave safe bowl to combine the chocolate morsels and the butter. Heat these ingredients in the microwave until melted, generally about 35 seconds, and stir the mixture to ensure the chocolate and butter are melted completely. Then whisk in the egg yolks and set the mixture aside to cool.
Pour the heavy cream into a chilled bowl and beat with a mixer at medium speed until the mixture starts to thicken. Mix in the sugar and the vanilla and whisk until the cream begins to form stiff peaks. Then carefully fold the whipped cream into the cooled chocolate mixture. Use the chocolate mousse for the filling in your chocolate cupcake “sandwiches”.
