Sherbet and Spicy Peanut Brittle
Sherbet is
always a delicious treat, and pairing this great sweet dessert
with a great salty peanut brittle can provide a wonderful taste
sensation.

- 2 cups
of water
- 1 cup
of sugar
- 2 cups
of buttermilk
- 1/4 teaspoon
of vanilla extract

of light corn syrup

cream of tartar
- 1 teaspoon
of ground cinnamon

- 2 tablespoons
of unsalted butter
- 2 cups
of roasted and salted peanuts
- 1 teaspoon
of baking soda
- vegetable
oil
Preparation
Steps – Buttermilk Sherbet
Begin by combining the sugar and the water in a saucepan. Bring
the mixture to a boil then allow it to cool slightly. Whisk in
the buttermilk and vanilla and refrigerate the mixture until cold.
Freeze using an ice cream machine.

Use vegetable oil to grease a sheet pan at least 11” x 17”
in size. Use a heavy saucepan to combine the water, sugar, cream
of tartar and corn syrup. Bring the mixture to a boil over medium
heat. Use a candy
thermometer to heat the mixture until it reaches 350 degrees Fahrenheit.
Remove the
mixture from the heat and quickly whisk in the spices. Next, stir
in the butter, peanuts and baking soda and pour the mixture on
to the oiled pan. Spread the mixture out a bit using a wooden
spoon. The mixture should be between 1/4” to 1/2”
inch thick. Allow the peanut brittle to harden uncovered in a
cool location. It should take between 30 and 45 minutes for the
mixture to harden.
